Paul Wedgwood once again Head Chef at Barbados Celtic Festival

Chef Paul was once again Head Chef at this years and was featured LIVE on Scottish TV making a dish on the beach at Discovery Bay Hotel on the west coast of the island.

It was hot in the kilt, but Paul is used to working in the heat, as he works closely with local chefs during the music festival, to create some unique dishes using Scottish recipes and Caribbean ingredients. This year he made a Bajan inspired haggis from the local breed of black belly sheep.

He was joined by Piper Kevin Dugas from Canada and dancer Andrea Salisbury.
