What will the day look like?
After a morning foraging in the wilds of East Lothian, you’ll return to the restaurant to enjoy a delicious tasting menu lunch using the ingredients you have identified throughout the day. It’s then time to sit back, relax and enjoy the experience.
Lunch will focus on how many of the foraged ingredients can be prepared and served, with dishes inspired by the morning’s discoveries. Paul will be on hand throughout lunch to talk through each dish, answer questions and share further insight into the ingredients and techniques used.
